New Year's Day Tradition

 New Year's Day Tradition 

calls for pork, greens, and black-eyed peas. At least they always have in my family. 

Never have been a fan of turnip or collard greens, but I was told any leafy green would do. So, for us that is spinach. 

My grandmother made Spinach balls and we always loved them, and ate a lot of them...even as children. It never dawned on me until I had my own kids that none of the adults would ever shoo us away from them. Yeah, picky eaters eating their weight in spinach? Yes, please. 

Not quite my grandmother's recipe, but it's close. (Apparently nobody ever wrote it down and so it's been mostly experimentation recreating this.) 

*Probably would have been a lot closer if I hadn't forgotten parmesan and instead had to use feta. Meh, we liked them anyway. 

*Incidentally my family also rarely ever measures herbs and spices. 

My cooking style is probably called chaotic. 

Spinach Puffs, small batch;

1 can of spinach, drained very well. 

1 box Stuffing mix, with herbs.

3 eggs, beaten.

1 stick of butter, melted. 

1/2 cup grated Parmesan cheese

salt and pepper

garlic powder

Mix well. 

Covered bowl with plastic wrap and chilled in the fridge for about 20 minutes. 

Preheat oven to 350. 

Baking sheet, with cooking spray. 

Form balls, used about half the mixture for the first batch.

Bake 20 minutes. Cooled slightly and transferred to another dish.

Round 2, ran out of cooking spray, used EVOO instead. But they turned out fine in the same amount of cooking time.
